About the Journal

Alchemist Journal is a small independent editorial dedicated to writing carefully about Alchemist — the people, the philosophy and the craft behind the Copenhagen restaurant.

We launched Alchemist Journal because we felt the world had plenty of restaurant reviews and not nearly enough patient writing about why considered kitchens behave the way they do. Alchemist, with its fifty impressions, its research lab, its 360° dome and its impact projects, is the kind of restaurant that rewards slow reading.

We are not affiliated with Alchemist ApS, with chef Rasmus Munk or with any restaurant group. The essays here are independent and non-commercial; they exist simply because the subject deserves real attention. Where we describe the restaurant's projects, menus or philosophy, we rely on publicly available material and on our own notes from the room.

Our work covers the philosophy of holistic cuisine, the science behind modern cooking, the ethics of sourcing, the architecture of a tasting menu and the quiet craft of pairing. We try to write for the curious reader rather than the industry insider — clearly, without jargon, and without hype.
